YIELD: 4 portions
3 tbsp butter, softened
6 tbsp raisins
1 vanilla pod
1 ¾ cups light cream
6 thick slices homemade-style white bread
1 large banana
3 medium eggs
2 tbsp brown sugar
Butter an ovenproof gratin dish.
Sprinkle half of the raisins over bottom.
Split vanilla pod down middle and scrape seeds into saucepan. Add pod and pour in cream.
Heat almost to boiling, remove from heat and let it cool for at least 30 minutes . Peel and thinly slice banana then arrange on bread in gratin dish. Top with remaining raisins and bead, buttered side up. Whisk together eggs and sugar until frothy and pour cream through a sieve into eggs. Pour mixture evenly over bread and bake for 30 – 35 minutes or until the blade of an inserted knife comes out clean. Serve hot with additional cream if desired.
