Basque Tuna and Potato Stew.

Basque Tuna

BASQUE TUNA AND POTATO STEW

YIELD: 6 PORTIONS

1200 grams fresh tuna
3 tbsp. Extra virgin olive oil
1 onion, chopped
4 cloves garlic, minced
2 red or green peppers, cut in strips
500 grams Tomatoes, diced
2 tsp. Spanish paprika
salt and pepper t t
red pepper flakes, t t
1200 grams Potatoes peeled and cut in cubes
180 ml. dry white wine
1 litre  water

In a heavy bottomed pot heat the oil and sauté onion, garlic, and peppers without letting them to brown. Add the tomatoes, paprika, salt, pepper, and red pepper flakes and let it cook for a few minutes. Add the potatoes, combine them with the other ingredients, and add the wine and water. Bring the liquid to a boil, cover and cook over medium heat until potatoes are nearly tender, about 15 minutes. Add the fish, cover and cook for another five to ten minutes until the fish is cooked through. Let the stew sit for five minutes before service.
