Yield: 4 portions
4 (150 –180 gram) catfish fillets
¼ cup cornmeal
¼ cup flour
2 eggs, beaten
1 330 ml lager beer, opened the night before
¼ cup minced onion
3 cups vegetable oil
salt and freshly ground pepper to taste
Blend, cornmeal, flour and salt and pepper well.
Add beer and onion to eggs.
Pat fillets dry, roll into flour mixture, then in batter, then again into flour mixture.
Heat oil and fry fillets until golden.
