YIELD: 4 portions

1     1 kilogram chicken, cut into eight pieces
2     large, ripe tomatoes, peeled, seeded and rough- chopped
1 medium onion, sliced
½ cup dry white wine
½ cup extra virgin olive oil
¼ cup butter
salt and freshly ground pepper t. t.

Heat oil and butter in a heavy-bottom frying pan. Fry chicken , add onions, tomatoes and cook for 10 minutes. Add wine and continue cooking 10 more minutes. Season to taste.
