YIELD: 16 cookies
½ cup unsalted butter cut into 10 pieces
¼ liquid honey
½ tsp vanilla extract
½ cup coarsely chopped, mixed nuts
1 ¼ cups all-purpose flour
In medium saucepan over medium heat, melt butter. Remove from heat and stir in honey, vanilla and nuts. Stir in flour and make stiff dough.
Spread and pat dough into un-greased 8” square pan and bake in a preheated oven at 350° F until golden. (15 minutes) .
Cool on rack for two minutes and cut into 16 portions. Let shortbreads cool for at let another 10 minutes then remove with spatula.
Store in a tightly covered container.
