When the weather gets hot, the last you think is about hot food.
You think of cooling foods like salads, cold, refreshing appetizers, soups, cold main dishes, and cooling drinks.
There are all types of Mediterranean recipes perfectly suited for sweltering days, in southern Spain, or France, or Greece, or Turkey.
Think of gazpacho, rice stuffed peppers, tomatoes, eggplants, cold sour cherry soups, cucumber salads, yoghurt based specialties or drinks, just to name a few.
A cold leek and potato soup aka Vichysoise or gazpacho
made with ripe tomatoes, garlic, olive oil, and spices will change your mood on a hot day, similarly you can try a cold borscht, or tarator, or okroshka, or a cucumber and yoghurt soup.
Here are some recipes you can try on hot days:
6 ripe tomatoes, peeled, seeded, chopped
1 purple onion, minced
i cucumber peeled, seeded, chopped
2 Tbsp. chopped chervil
1 Clove of garlic, minced
¼ cup extra virgin olive oil
2 Tbsp lemon juice
salt and pepper to taste
Combine all ingredients. Blend slightly to desired consistency. Pour into a glass container, and refrigerate overnight.
4 Tbsp unsalted butter
4 –5 cups of leeks, sliced white part only
1 medium onion, chopped
1 Kg. Yukon gold potatoes, peeled and chopped
6 cups of defatted chicken stock or water
salt and white pepper to taste
1 cup of whipping cream
Cold Cherry Soup
5 cups of water
½ cup granulated sugar
1 ½ lbs (650 grams) sour cherries pitted reserve pits)
1 cup drained yoghurt
Place cherries and pits in a large pot, add water. Bring to a boil. Turn down the heat and simmer for five minutes. Drain cherries. Reserve liquid. Remove pits. Add sugar and the wine, salt, lemon zest and bring to a boil over medium heat. Boil for five minutes. Add cherries, and turn the heat down. Simmer for five minutes.
Cool a little, stir in the yoghurt until smooth. Refrigerate. This soup will keep for up to three days.
