PORK WITH APPLES

YIELD 4 PORTIONS

2 TBSP BUTTER
600 grams PORK TENDERLOIN, SLICED
1 ONION CHOPPED
1 1/ 2 CUPS SLICED CELLERY
1 COOKING APPLE, CORED AND SLICED
2 CLOVES OF GARLIC, MINCED
SALT AND FRESHLY GROUND PEPPER
1 TBSP THYME, CHOPPED
180 ml DRY RIESLING
1 TBSP ALL PURPOSE FLOUR
250 ml WHIPPING CREAM

PREHEAT OVEN TO 350°F (175 C). MELT THE BUTTER IN A SKILLET OVER MEDIUM HEAT. FRY PORK SLICES FOR ONE OR TWO MINUTES ON EACH SIDE UNTIL BROWN. PLACE IN A BA KING DISH AND SET ASIDE. KEEP WARM. IN THE SAME SKILLET, ON MEDIUM HEAT, ADD THE ONION, CELERY, AND APPLE. COOK FOR TWO TO THREE MINUTES. ADD THE GARLIC AND COOK FOR TWO MINUTES MORE.

IN A BOWL MIX THE FLOUR WITH A LITTLE OF THE WINE TO FORM A THIN PASTE. STIR IN THE REMAINING WINE, CREAM AND THE PASTE INTO THE SKILLET.

BRING TO A BOIL THEN SIMMER TO REDUCE THE SAUCE TO DESIRED CONSISTENCY. POUR OVER PORK AND BAKE FOR 20 – 25 MINUTES.
