Italian Style

PORK CHOPS ITALIAN STYLE

YIELD 6 PORTIONS

2 TBSP EXTRA VIRGIN OLIVE OIL
6 PORK CHOPS CENTRE CUT (  6 OZ EACH )
1 CUP CHOPPED ONION
1 CUP CHOPPED TOMATOES
2 CLOVES OF GARLIC, MINCED
1 CUP SLICED MUSHROOMS
1 CUP CHOPPED GREEN PEPPERS
SALT AND FRESHLY GROUND PEPPER

SAUCE:
1 4 cup butter
1 4 all purpose flour
1 cup dry Riesling
3 cups milk
2 tsp chopped fresh tarragon
2 tsp chopped fresh rosemary
2 tsp chopped fresh oregano
salt and freshly ground pepper to taste
2 tbsp grated Parmesan cheese

HEAT THE OIL IN A SKILLET OVER HIGH HEAT. FRY PORK CHOPS FOR FIVE MINUTES ON EACH SIDE. REMOVE AND KEEP WARM. ADD ONIONS, GARLIC, MUSHROOMS AND PEPPERS TO SKILLET. COOK STIRRING CONSTANTLY FOR SEVEN TO EIGHT MINUTES UNTIL THE VEGETABLES ARE SOFT. ADD WINE AND REDUCE LIQUID BY HALF. SEASON TO TASTE.
