Professor B’s Vintages October 10 Release Recommendations


This large release contains many outstanding red wines but is limited in white wine selection.

The In Store Discovery wines are noteworthy, and any wine lover in small-production products should at least consider my recommendations.


Sazerac 6 Years Old Straight Whiskey, Buffalo Trace Distillery, Kentucky
American distillers generally produce Bourbon, Buffalo Trace Distillery and a few others also produce rye and other grain whiskies, along with Bourbon. This rye whiskey emanates distinct aromatic characteristics that display complexity. It is “juicy” and offers spicy flavours and dryness that Bourbon whiskies cannot. Very appealing and satisfying.

Junmai Genshu Jizake Sake, Tenzan, Kyushu, Japan
Mellow, pure rice aromas emanate from the glass. The purity of this sake is noteworthy. It is full- bodied and can enhance strongly flavoreed dishes (suki yaki or medium-rare sliced griddle-cooked steaks, yaki tori) or sushi or sashimi.

Fortified wine

La Guita Manzanilla Sherry, Hijos de Rainera Perez Marin, Sanlucar de Barrameda, Jerez de la Frontera, Spain
Apple, almond and green olive aromas dominate the nose of this dry, pale, slightly salty wine. Well balanced and suitable with all kinds of tapas.

Dessert wine

Tokaji Aszu 4 Puttonyos, 2003, Tokaj Kerskedohaz, Hungary
Aromas of apricot, honey and orange marmalade waft out of the glass. This medium-bodied wine is sweet with an excellent underlying acidity. A refined and elegant wine suitable for a fine Dobos torte, or with ripe berries marinated in the same wine.

Sparkling wine

Mirabelle Brut Rose, Schramsberg, California
A vibrant, crisp, fruity, zesty, dry sparkling wine made using the Champagne method. Refined and elegant from arguably the best sparkling wine producer in the U S A.

Red Shoulder Ranch Chardonnay, 2011, Shafer, Napa Valley, California
A superbly balanced, aromatic, high-alcohol full-bodied wine.
It is finely calibrated with a fine underlying acidity.

Intense and fruity, this dry wine is ready to enjoy with crustaceans, or oysters on-the-half-shell. Pleasant mouth feel with a long aftertaste.

Red wines

Cabernet Franc, 2011, Featherstone, Niagara Peninsula, Ontario
Cabernet franc is probably the most suitable red grape variety for the Niagara Peninsula terroir.
This is an excellent example of a “juicy”, dry, flavourful, medium-bodied, wine with good acidity and ripe berry flavours. Good value.
