Professor B’s September 5 Vintages Release Recommendations

The highlights of this release are Dom Perignon, 2005, ( $ 219.95),
Chardonnay, Hidden Bench, 2013, ($ 28.95),
Ridge Montebello, 2012, ( $ 190.95), Quinta Da Cavadinha Vintage Port 1998, Warre, ( 375 ml $ 28.95), and for those who prefer spirits, The Arran malt 10-year old single malt.

The rest of the release contains some products worth trying, and a few that require cellaring.
It seems that more and more California wineries are producing sweet (more than eight grams of residual sugar per litre) wines, and an attempt to capture market share, but in the process diluting quality.

It seems that Vintages database indicates September to be a transition month when people start thinking about “serious” red wines. There is no rose in this release.

Spirit

The Arran Malt 10-Year-Old Single Malt (unchillfiltered), Isle Of Arran Distillers, Scotland
This unpeated malt, aged in second-use Bourbon and Sherry barrels is balanced and mellow, with honey undertones. A fine whisky to sip, and contemplate.

Botlled in 2000, this super ripe, perfumed port, emanating bitter chocolate and coffee Arabica aromas would gladden the heart of every serious port aficionado.

This legendary champagne brand is released only as a vintage champagne. The 2005 is expressive, delicate, earthy, elegant, and age worthy, although its can be enjoyed now.

Brilliant yellow in colour. Aromas of citrus peel, poached pear, and apple butter waft out of the glass. Perceptible minerality. Intense mouth feel, well balanced, with a long aftertaste.

Pale yellow with green tinges. smells of lemon dominate the nose. in the mouth, it shows its delicacy, balance and elegance.

Pair with strongly flavoured foods (roast fillet of beef with sauce bordelaise, medium-rare grilled steaks beurre maitre d`hotel, hare stew, bison stew, old cheddar, parmegiano reggiano. cellar for at least eight to 20 years.
