Spaghetti with Smoked Chicken, Tomatoes and Arugula.

Spaghetti

SPAGHETTI WITH SMOKED CHICKEN, TOMATOES AND ARUGULA

YIELD: 4 PORTIONS

500 grams SPAGHETTI
4 TBS EXTRA VIRGIN OLIVE OIL

4 GARLIC CLOVES MINCED

4 TBS FINELY CHOPPED FRESH BASIL

1 YBS FINELY CHOPPED CHERVIL

2 TSP LEMON ZEST, MINCED
FRESHLY GROUND PEPPER  TT
SALT TT
2 TBS OLIVE OIL
1 SMALL SMOKED CHICKEN, BONED AND SHREDDED
1 MEDIUM TOMATO, SEEDED AND CHOPPED
¼ CUP SAUVIGNON BLANC
4 CUPS ARUGULA
½ CUP GRATED PARMESAN
1 TSP JULIENNED FRESH MINT, FOR GARNISH

IN A SMALL BOWL, ADD OIL , GARLIC, BASIL, CHERVIL, LEMON SALT AND PEPPER AND STIR.
SET ASIDE AT ROOM TEMPERATURE.
COOK PASTA ACCORDING TO PACKAGE DIRECTIONS
MEANWHILE, HEAT 2 TBS OF OLIVE OIL  IN SKILLET ; ADD THE TOMATOES.
ADD WINE AND LET COOK UNTIL TOMATOES SOFTEN. DRAIN PASTA
INTO PLATTER AND IMMETDIATELY ADD THE CHICKEN AND TOMATO MIXTURE, THE ARUGULA AND THEN ADD THE BASIL-LEMON MARINADE. TOSS WITH PARMESAN  AND SPRINKLE WITH MINT.

NOTE; 2 TBS OF WHIPPING CREAM WILL MAKE THIS DISH RICHER AND MORE FLAVOURFUl.
